Description

A quick and easy recipe for cheesy chicken quesadillas that can be made in just 15 minutes, perfect for busy weeknights.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 4 flour tortillas
  • 1/2 cup salsa
  • 1 tablespoon olive oil
  • Optional toppings: sour cream, guacamole, chopped cilantro

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
  3. Add shredded chicken and salsa on top of the cheese.
  4. Sprinkle the remaining cheese over the chicken and fold the tortilla in half.
  5. Cook for 2-3 minutes until the bottom is golden brown, then flip and cook for another 2-3 minutes.
  6. Remove from skillet and repeat with remaining tortillas.
  7. Cut into wedges and serve with optional toppings.

  • Feel free to customize with your favorite vegetables or spices.
  • For a spicier kick, add jalapeños or hot sauce.
