Description

A quick and easy creamy broccoli soup perfect for busy weeknights, ready in just 30 minutes.


Ingredients

Scale
  • 4 cups broccoli florets
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and minced garlic, sauté until translucent.
  3. Add broccoli florets and vegetable broth, bring to a boil.
  4. Reduce heat and simmer for 15 minutes until broccoli is tender.
  5. Use an immersion blender to puree the soup until smooth.
  6. Stir in heavy cream and season with salt and pepper.
