Description

A quick and delicious creamy tomato gnocchi dish topped with fresh burrata cheese, perfect for a weeknight dinner.


Ingredients

  • 1 package gnocchi (about 16 oz)
  • 2 cups cherry tomatoes, halved
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish
  • 1 ball burrata cheese

Instructions

  1. In a large pot, bring salted water to a boil and cook the gnocchi according to package instructions.
  2. In a large skillet, heat olive oil over medium heat and add minced garlic, cooking until fragrant.
  3. Add the halved cherry tomatoes to the skillet and cook until they start to soften.
  4. Pour in the heavy cream and bring to a simmer.
  5. Stir in the grated Parmesan cheese until melted and combined.
  6. Season with salt and pepper to taste.
  7. Drain the gnocchi and add it to the skillet, tossing to coat in the creamy sauce.
  8. Serve topped with burrata cheese and fresh basil.
