Air Fryer Stuffed Peppers are a delicious and nutritious meal option, perfect for a hearty weeknight dinner. Packed with protein and flavor, these peppers are easy to prepare and cook quickly in an air fryer.


Ingredients

  • 4 large bell peppers
  • 1 pound ground turkey or beef
  • 1 cup cooked rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup diced tomatoes
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the air fryer to 350°F (175°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a large bowl, mix together the ground turkey or beef, cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
  4. Stuff each bell pepper with the meat and rice mixture.
  5. If using, sprinkle shredded cheese on top of the stuffed peppers.
  6. Place the stuffed peppers in the air fryer basket and cook for 15-20 minutes, or until the peppers are tender and the meat is cooked through.
  7. Remove from the air fryer and let cool for a few minutes before serving.
