- 4 large bell peppers
- 1 pound ground turkey or beef
- 1 cup cooked rice
- 1 can black beans, drained and rinsed
- 1 cup corn
- 1 cup diced tomatoes
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- 1 cup shredded cheese (optional)
Instructions
- Preheat the air fryer to 350°F (175°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a large bowl, mix together the ground turkey or beef, cooked rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Stuff each bell pepper with the meat and rice mixture.
- If using, sprinkle shredded cheese on top of the stuffed peppers.
- Place the stuffed peppers in the air fryer basket and cook for 15-20 minutes, or until the peppers are tender and the meat is cooked through.
- Remove from the air fryer and let cool for a few minutes before serving.
