- 3 lbs pork shoulder
- 2 cups apple cider
- 1 onion, chopped
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp thyme
- 1 tsp rosemary
- 2 apples, sliced
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat olive oil over medium-high heat.
- Season the pork shoulder with salt and pepper, then sear on all sides until browned.
- Remove the pork and set aside. In the same pot, add onions and garlic, sautéing until softened.
- Pour in the apple cider, scraping up any browned bits from the bottom of the pot.
- Add thyme, rosemary, and sliced apples to the pot.
- Return the pork to the pot, cover, and transfer to the oven.
- Braise for 3-4 hours, or until the pork is fall-apart tender.
- Remove from the oven and let rest before slicing.
Notes
- For extra flavor, marinate the pork in apple cider overnight.
- Serve with mashed potatoes or crusty bread to soak up the sauce.
- This dish can be made a day ahead and reheated for better flavor.
