- 1 1/2 cups gluten-free whole grain flour
- 1 cup apple cider
- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground ginger
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the apple cider.
- In another bowl, whisk together the gluten-free flour, baking powder, baking soda, salt, and spices.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Let the cupcakes cool completely before frosting.
Notes
- For a stronger apple flavor, consider adding apple chunks to the batter.
- Store cupcakes in an airtight container at room temperature for up to 3 days.
- Frosting can be made ahead of time and stored in the refrigerator.
