Description

Delicious and soft whoopie pies filled with creamy apple cider frosting, perfect for fall.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • 1/4 cup cream cheese, softened
  • 1/4 cup apple cider (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, cream together the butter and brown sugar until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of the batter onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool completely on a wire rack.
  9. For the frosting, beat together the powdered sugar, cream cheese, and apple cider until smooth.
  10. Spread frosting on the flat side of one cookie and sandwich it with another cookie.

  • Store whoopie pies in an airtight container for up to 3 days.
  • For a stronger apple flavor, reduce the frosting’s powdered sugar and increase the apple cider.
  • These pies can be frozen for up to a month; just thaw before serving.
