Description

Apple Cider Whoopie Pies are soft spiced cookies filled with a creamy filling, perfect for fall.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 cup apple cider
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for filling)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, cream together brown sugar, granulated sugar, and butter until light and fluffy.
  4. Add the egg, apple cider, and vanilla extract to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop spoonfuls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  9. For the filling, beat together cream cheese, powdered sugar, and vanilla extract until smooth.
  10. Once the cookies are cool, spread the filling on the flat side of one cookie and sandwich it with another cookie.
