Ingredients

  • 1/2 cup pumpkin puree

  • 1/3 cup sugar

  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 cup rolled oats (for streusel)
  • 2 tablespoons butter, melted (for streusel)
  • 2 tablespoons brown sugar (for streusel)
  • 1/4 teaspoon cinnamon (for streusel)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the diced apple gently.
  6. In a small bowl, mix the rolled oats, melted butter, brown sugar, and cinnamon to make the streusel topping.
  7. Divide the muffin batter evenly among the muffin cups and sprinkle the streusel on top.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool for a few minutes before serving.
