Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the flour, sugar, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt.
- In another bowl, whisk together the pumpkin puree, vegetable oil, egg, and vanilla extract.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the diced apple gently.
- In a small bowl, mix the rolled oats, melted butter, brown sugar, and cinnamon to make the streusel topping.
- Divide the muffin batter evenly among the muffin cups and sprinkle the streusel on top.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for a few minutes before serving.
Notes
- For a sweeter muffin, add more sugar to taste.
- These muffins can be stored in an airtight container for up to 3 days.
