Ingredients

  • 6 large eggs
  • 1 cup fresh asparagus, trimmed and cut into 1-inch pieces
  • 1/2 cup goat cheese, crumbled
  • 1/4 cup milk
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, whisk together the eggs, milk, salt, and pepper.
  3. In an oven-safe skillet, heat olive oil over medium heat and add the asparagus. Sauté for about 3-4 minutes until tender.
  4. Pour the egg mixture over the asparagus and cook for 2-3 minutes until the edges start to set.
  5. Sprinkle the crumbled goat cheese on top.
  6. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and lightly golden.
  7. Let it cool for a few minutes before slicing and serving.
