- 2 cups all-purpose flour
- 1/4 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/4 cup unsalted butter, cold and cubed
- 1/2 cup whole milk
- 1 large egg
- 1 teaspoon vanilla extract
- Clotted cream, for serving
- Strawberry jam, for serving
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- Add the cold, cubed butter and mix until the mixture resembles coarse crumbs.
- In a separate bowl, combine the milk, egg, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Turn the dough onto a floured surface and knead gently until smooth.
- Roll out the dough to about 1-inch thickness and cut into rounds.
- Place the scones on a baking sheet lined with parchment paper.
- Bake for 15-20 minutes or until golden brown.
- Serve warm with clotted cream and strawberry jam.
Notes
- For best results, use cold butter and handle the dough as little as possible.
- These scones are best enjoyed fresh but can be stored in an airtight container for a couple of days.
- Feel free to add raisins or currants for a traditional twist.
