A traditional recipe for making authentic Turkish Delight, also known as Lokum, featuring a chewy texture and a variety of flavors.

- 2 cups granulated sugar
- 1 cup water
- 1/2 cup cornstarch
- 1/4 cup lemon juice
- 1/2 teaspoon cream of tartar
- 1 teaspoon rosewater or orange blossom water
- 1/2 cup chopped nuts (optional)
- Powdered sugar for dusting
Instructions
- In a saucepan, combine sugar and water. Cook over medium heat until the sugar dissolves.
- In a separate bowl, mix cornstarch with 1 cup of water and stir until smooth.
- Slowly add the cornstarch mixture to the sugar syrup, stirring constantly.
- Add lemon juice and cream of tartar, and continue to cook while stirring until the mixture thickens.
- Once thickened, remove from heat and stir in rosewater or orange blossom water and nuts if using.
- Pour the mixture into a greased pan and let it cool for several hours or overnight.
- Once set, cut into squares and dust with powdered sugar before serving.
Notes
- Store Turkish Delight in an airtight container to keep it fresh.
- Experiment with different flavors by adding fruit extracts or food coloring.
- For a firmer texture, increase the cooking time slightly.
