Description

Baked Black Bean Taquitos are a delicious and healthy snack option, perfect for any occasion. These crispy rolled tortillas are filled with seasoned black beans and baked to perfection.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon salt
  • 8 small corn tortillas
  • 1 cup shredded cheese (optional)
  • Cooking spray or olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mash the black beans with a fork and mix in cumin, chili powder, garlic powder, onion powder, and salt.
  3. If using, stir in the shredded cheese until well combined.
  4. Warm the tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
  5. Place a spoonful of the black bean mixture on each tortilla and roll them tightly.
  6. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  7. Spray the taquitos lightly with cooking spray or brush with olive oil.
  8. Bake for 15-20 minutes or until golden and crispy.
  9. Serve warm with your favorite dipping sauce.

  • For a spicier version, add diced jalapeños to the filling.
