- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon salt
- 8 small corn tortillas
- 1 cup shredded cheese (optional)
- Cooking spray or olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mash the black beans with a fork and mix in cumin, chili powder, garlic powder, onion powder, and salt.
- If using, stir in the shredded cheese until well combined.
- Warm the tortillas in a dry skillet for about 30 seconds on each side to make them pliable.
- Place a spoonful of the black bean mixture on each tortilla and roll them tightly.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
- Spray the taquitos lightly with cooking spray or brush with olive oil.
- Bake for 15-20 minutes or until golden and crispy.
- Serve warm with your favorite dipping sauce.
Notes
- For a spicier version, add diced jalapeños to the filling.
- These taquitos can be frozen before baking; just add a few extra minutes to the baking time if cooking from frozen.
