Description
A delicious BBQ Chicken Quesadilla Melt that combines tender chicken, tangy BBQ sauce, and melted cheese in a crispy tortilla.

- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 large flour tortillas
- 1 tablespoon olive oil
- 1/2 cup red onion, thinly sliced
- 1/4 cup fresh cilantro, chopped
Instructions
- In a bowl, mix the shredded chicken with BBQ sauce until well coated.
- Heat olive oil in a skillet over medium heat.
- Place one tortilla in the skillet and sprinkle half of the cheese on one half of the tortilla.
- Add half of the BBQ chicken mixture, some red onion slices, and a sprinkle of cilantro on top of the cheese.
- Fold the tortilla over and cook until golden brown, about 3-4 minutes.
- Flip and cook the other side until golden and the cheese is melted.
- Remove from skillet and repeat with the remaining ingredients.
- Cut into wedges and serve warm.
Notes
- Feel free to add other toppings like jalapeños or bell peppers.
- Serve with sour cream or guacamole for dipping.
- Can be made ahead and reheated for a quick meal.
