- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup heavy whipping cream
- 2 cups fresh strawberries, sliced
- ¼ cup granulated sugar
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs and melted butter until combined.
- Press the mixture into the bottom of a springform pan to form the crust.
- In a separate bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth.
- In another bowl, whip the heavy cream until stiff peaks form, then fold it into the cream cheese mixture.
- Pour the cream cheese mixture over the crust and smooth the top.
- Bake for 45 minutes, then let it cool completely.
- In a saucepan, combine sliced strawberries and granulated sugar, and cook until the strawberries are soft.
- Once the cheesecake is cooled, top it with the strawberry mixture.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a gluten-free version, use gluten-free graham crackers.
- Make sure the cream cheese is at room temperature for easier mixing.
- Top with additional fresh strawberries for garnish if desired.
