A hearty and flavorful Italian Wedding Soup that combines tender meatballs, fresh greens, and a savory broth for a comforting meal.


Ingredients

Scale
  • 1 pound ground beef
  • 1/2 pound ground pork
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped parsley
  • 1 egg
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 cups chicken broth
  • 2 cups fresh spinach
  • 1 cup diced carrots
  • 1 cup diced celery
  • 1/2 cup small pasta (like acini di pepe)
  • Additional Parmesan cheese for serving

Instructions

  1. In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, salt, and pepper. Mix well and form into small meatballs.
  2. In a large pot, bring chicken broth to a boil over medium heat.
  3. Add the meatballs to the boiling broth and cook for about 10 minutes.
  4. Add diced carrots and celery, and cook for an additional 5 minutes.
  5. Stir in the small pasta and cook until al dente, about 8 minutes.
  6. Add the fresh spinach and cook until wilted.
  7. Serve hot, garnished with additional Parmesan cheese.

Notes

  • For a richer flavor, you can sauté the vegetables in olive oil before adding the broth.
  • Feel free to substitute the greens with kale or Swiss chard.
  • This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
