Ingredients

- 1 pound ground beef
- 1/2 pound ground pork
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped parsley
- 1 egg
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 8 cups chicken broth
- 2 cups fresh spinach
- 1 cup diced carrots
- 1 cup diced celery
- 1/2 cup small pasta (like acini di pepe)
- Additional Parmesan cheese for serving
Instructions
- In a large bowl, combine ground beef, ground pork, breadcrumbs, Parmesan cheese, parsley, egg, garlic powder, salt, and pepper. Mix well and form into small meatballs.
- In a large pot, bring chicken broth to a boil over medium heat.
- Add the meatballs to the boiling broth and cook for about 10 minutes.
- Add diced carrots and celery, and cook for an additional 5 minutes.
- Stir in the small pasta and cook until al dente, about 8 minutes.
- Add the fresh spinach and cook until wilted.
- Serve hot, garnished with additional Parmesan cheese.
Notes
- For a richer flavor, you can sauté the vegetables in olive oil before adding the broth.
- Feel free to substitute the greens with kale or Swiss chard.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
