Description

Ingredients

  • 4 large leeks, cleaned and sliced
  • 4 medium potatoes, peeled and diced
  • 1 onion, chopped
  • 4 cups vegetable broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add the chopped onion and sliced leeks, sautéing until softened.
  3. Add the diced potatoes and vegetable broth, bringing to a boil.
  4. Reduce heat and simmer until the potatoes are tender, about 20 minutes.
