- 1 onion, chopped
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (28 oz) diced tomatoes
- 1 packet taco seasoning
- 4 cups beef broth
- 1 cup water
- 1 bell pepper, chopped
- 1 jalapeño, chopped (optional)
- Salt and pepper to taste
Instructions
- In a large pot, brown the ground beef over medium heat until fully cooked.
- Add the chopped onion and bell pepper, cooking until softened.
- Stir in the taco seasoning, mixing well.
- Add the black beans, kidney beans, corn, diced tomatoes, beef broth, and water.
- Bring the mixture to a boil, then reduce heat and let simmer for 20-30 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with your favorite toppings like cheese, sour cream, or avocado.
