Ingredients

- 2 cans of white beans (cannellini or great northern), drained and rinsed
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves of garlic, minced
- 4 cups vegetable broth
- 1 can diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups kale, chopped
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion, carrots, and celery, and sauté until softened.
- Add the garlic and cook for another minute until fragrant.
- Stir in the white beans, diced tomatoes, vegetable broth, thyme, and rosemary. Bring to a boil.
- Reduce heat and let simmer for about 20 minutes.
- Add the chopped kale and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste before serving.
Notes
- This soup can be made ahead of time and stored in the refrigerator for up to 5 days.
- It freezes well, so consider making a double batch.
