- 1 head of cabbage, cut into wedges
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup sour cream
- 1 lime, juiced
- 1 jalapeño, minced
- 1/4 cup fresh cilantro, chopped
- 1 cup radishes, thinly sliced
- Tortillas, for serving
Instructions
- Preheat the oven to 425°F (220°C).
- In a large bowl, toss the cabbage wedges with olive oil, salt, and black pepper.
- Place the cabbage on a baking sheet and roast for 20-25 minutes until the edges are blistered.
- While the cabbage is roasting, prepare the spicy lime crema by mixing sour cream, lime juice, minced jalapeño, and cilantro in a bowl.
- Once the cabbage is done, remove it from the oven and let it cool slightly.
- Assemble the tacos by placing the blistered cabbage on tortillas, topping with spicy lime crema and sliced radishes.
- Serve immediately and enjoy!
Notes
- For a vegan option, substitute sour cream with a plant-based alternative.
- Adjust the spiciness by adding more or less jalapeño.
