Description

A delicious and unique taco recipe featuring blistered-edge cabbage, topped with a spicy lime crema and fresh radish.


Ingredients

  • 1 head of cabbage, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup sour cream
  • 1 lime, juiced
  • 1 jalapeño, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 cup radishes, thinly sliced
  • Tortillas, for serving

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, toss the cabbage wedges with olive oil, salt, and black pepper.
  3. Place the cabbage on a baking sheet and roast for 20-25 minutes until the edges are blistered.
  4. While the cabbage is roasting, prepare the spicy lime crema by mixing sour cream, lime juice, minced jalapeño, and cilantro in a bowl.
  5. Once the cabbage is done, remove it from the oven and let it cool slightly.
  6. Assemble the tacos by placing the blistered cabbage on tortillas, topping with spicy lime crema and sliced radishes.
