Ingredients

- 1 cup whole wheat flour
- 1/2 cup protein powder
- 1/2 cup cream cheese, softened
- 1/2 cup Greek yogurt
- 1/2 cup honey or maple syrup
- 1/2 cup blueberries
- 2 eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix the whole wheat flour, protein powder, baking powder, baking soda, and salt.
- In another bowl, beat the cream cheese, Greek yogurt, honey (or maple syrup), and eggs until smooth.
- Combine the wet and dry ingredients, mixing until just combined.
- Gently fold in the blueberries.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool before serving.
Notes
- Store leftovers in an airtight container in the refrigerator for up to 5 days.
- These muffins can be frozen for up to 3 months.
- Feel free to substitute other fruits for blueberries if desired.
