Description

Delicious and healthy blueberry muffins made with cream cheese and protein for a nutritious snack.


Ingredients

Scale
  • 1 cup whole wheat flour
  • 1/2 cup protein powder
  • 1/2 cup cream cheese, softened
  • 1/2 cup Greek yogurt
  • 1/2 cup honey or maple syrup
  • 1/2 cup blueberries
  • 2 eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix the whole wheat flour, protein powder, baking powder, baking soda, and salt.
  3. In another bowl, beat the cream cheese, Greek yogurt, honey (or maple syrup), and eggs until smooth.
  4. Combine the wet and dry ingredients, mixing until just combined.
  5. Gently fold in the blueberries.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 5 days.
  • These muffins can be frozen for up to 3 months.
