A quick and delicious recipe for Bourbon BBQ Bacon Cheeseburger Meatball Subs that can be prepared in just 30 minutes.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1/2 cup BBQ sauce
- 1/4 cup bourbon
- 8 slices cooked bacon, chopped
- 4 sub rolls
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, parsley, and egg. Mix until well combined.
- Form the mixture into meatballs and place them on a baking sheet.
- In a small saucepan, combine BBQ sauce and bourbon, then heat over medium heat until warm.
- Pour the BBQ bourbon sauce over the meatballs and bake for 15 minutes.
- While the meatballs are baking, prepare the sub rolls by toasting them lightly.
- Once the meatballs are done, place them in the toasted sub rolls.
- Top with chopped bacon and shredded cheddar cheese.
- Return to the oven for an additional 5 minutes or until the cheese is melted.
- Serve hot and enjoy!
Notes
- Feel free to adjust the amount of BBQ sauce to your taste.
- For a spicier kick, add some hot sauce to the meatball mixture.
- These subs can be made ahead of time and reheated before serving.
