- 4 large sweet potatoes
- 1 cup brown sugar
- 1/2 cup butter
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 2 cups mini marshmallows
Instructions
- Preheat the oven to 350°F (175°C).
- Peel and slice the sweet potatoes into rounds.
- In a large pot, boil the sweet potatoes until tender, about 15-20 minutes.
- Drain the sweet potatoes and place them in a baking dish.
- In a saucepan, melt the butter and mix in the brown sugar, milk, and vanilla extract until combined.
- Pour the mixture over the sweet potatoes and stir gently to coat.
- Top with mini marshmallows.
- Bake in the preheated oven for 25-30 minutes, or until the marshmallows are golden brown.
Notes
- For a crunchier topping, broil the marshmallows for a few minutes at the end of baking.
- Feel free to add chopped pecans for extra texture.
