A deliciously easy carrot soup recipe that is perfect for a comforting meal.
Ingredients

- 4 large carrots, peeled and chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 teaspoon ground ginger (optional)
- 1/2 cup coconut milk (optional)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions and garlic, sauté until translucent.
- Add chopped carrots and sauté for another 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Reduce heat and let it simmer for 20-25 minutes until carrots are tender.
- Use an immersion blender to puree the soup until smooth.
- If desired, stir in coconut milk and ground ginger.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a spicier kick, add a pinch of cayenne pepper.
- This soup can be stored in the refrigerator for up to 5 days.
