Description

Cheddar Bay Chicken Cobbler is a savory dish that combines tender chicken with a flavorful biscuit topping, inspired by the famous Cheddar Bay Biscuits.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup chicken broth
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1 cup biscuit mix
  • 1/2 cup milk
  • 1/4 cup butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the shredded chicken, chicken broth, mixed vegetables, and half of the cheddar cheese.
  3. In another bowl, mix the biscuit mix, milk, melted butter, garlic powder, onion powder, salt, and pepper until just combined.
  4. Pour the chicken mixture into a greased baking dish.
  5. Drop spoonfuls of the biscuit mixture over the chicken mixture.
  6. Sprinkle the remaining cheddar cheese on top.
  7. Bake for 25-30 minutes or until the biscuits are golden brown and cooked through.

Notes

  • For a spicier version, add some cayenne pepper to the biscuit mix.
  • Leftover rotisserie chicken works great for this recipe.
  • Serve with a side salad for a complete meal.
