A comforting and delicious cheesy root vegetable gratin that combines various root vegetables with a creamy cheese sauce, perfect for a cozy meal.

- 2 cups of potatoes, thinly sliced
- 2 cups of carrots, thinly sliced
- 1 cup of parsnips, thinly sliced
- 1 cup of turnips, thinly sliced
- 2 cups of heavy cream
- 1 cup of grated cheese (such as Gruyère or Cheddar)
- 2 cloves of garlic, minced
- Salt and pepper to taste
- 1 tablespoon of fresh thyme, chopped
- 1/2 cup of breadcrumbs
Instructions
- Preheat the oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced root vegetables.
- In a saucepan, heat the heavy cream and add the minced garlic, salt, pepper, and thyme. Bring to a simmer.
- Layer half of the root vegetables in a greased baking dish.
- Pour half of the cream mixture over the vegetables and sprinkle with half of the grated cheese.
- Repeat the layers with the remaining vegetables, cream, and cheese.
- Top with breadcrumbs for a crispy finish.
- Bake in the preheated oven for 45-50 minutes, or until the vegetables are tender and the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
- Feel free to mix and match root vegetables based on your preference.
- For a lighter version, you can substitute half of the heavy cream with milk.
- This dish can be prepared ahead of time and baked just before serving.
