- 1 tsp dried oregano
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
Instructions
- In a large pot, heat a little oil over medium heat and sauté the onion and garlic until translucent.
- Add the carrots and celery, cooking until they begin to soften.
- Pour in the chicken broth and water, bringing the mixture to a boil.
- Add the chicken breasts and cook until they are no longer pink in the center, about 15-20 minutes.
- Remove the chicken, shred it, and return it to the pot.
- Stir in the capers, lemon juice, oregano, salt, and pepper.
- Simmer for an additional 5 minutes to allow the flavors to meld.
- Serve hot, garnished with fresh parsley.
