A hearty and comforting chicken potato soup that warms you up on cold days.
Ingredients

- 2 cups cooked chicken, shredded
- 4 medium potatoes, diced
- 1 onion, chopped
- 2 carrots, sliced
- 3 celery stalks, chopped
- 4 cups chicken broth
- 1 cup milk
- 2 tablespoons butter
- 1 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onion, carrots, and celery, and sauté until softened.
- Add the diced potatoes and chicken broth, and bring to a boil.
- Reduce heat and simmer until the potatoes are tender.
- Stir in the shredded chicken, milk, garlic powder, salt, and pepper.
- Cook for an additional 5 minutes, then serve hot.
Notes
- Feel free to add other vegetables like peas or corn for extra flavor.
- This soup can be made ahead and stored in the refrigerator for up to 3 days.
- For a thicker soup, mash some of the potatoes before adding the chicken.
