Chicken Pozole Verde is a delicious and comforting Mexican soup made with tender chicken, hominy, and a vibrant green sauce.

- 2 lbs chicken thighs
- 1 can (15 oz) hominy, drained and rinsed
- 4 cups chicken broth
- 1 cup tomatillos, husked and chopped
- 1/2 cup fresh cilantro, chopped
- 1 jalapeño, chopped
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp cumin
- Salt and pepper to taste
- 1 lime, cut into wedges
- Radishes, sliced for garnish
- Avocado, diced for garnish
Instructions
- In a large pot, combine chicken thighs, chicken broth, onion, garlic, and cumin. Bring to a boil.
- Reduce heat and simmer for about 30 minutes, or until chicken is cooked through.
- Remove chicken from the pot, shred it, and set aside.
- Add tomatillos, jalapeño, and hominy to the pot. Simmer for an additional 15 minutes.
- Return shredded chicken to the pot and stir in chopped cilantro. Season with salt and pepper to taste.
- Serve hot, garnished with lime wedges, sliced radishes, and diced avocado.
Notes
- For a spicier version, leave the seeds in the jalapeño.
- This dish can be made ahead of time and reheated.
- Feel free to add other toppings like shredded cabbage or tortilla strips.
