Description

Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 1/4 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon peppermint extract
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
  3. In another bowl, mix granulated sugar, brown sugar, vegetable oil, milk, vanilla extract, and peppermint extract until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Chill the dough in the refrigerator for 30 minutes.
  6. Roll the dough into balls and then roll each ball in powdered sugar.
  7. Place the cookies on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes or until the edges are set.
  9. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

  • For a stronger peppermint flavor, increase the peppermint extract to 1 teaspoon.
