- 1/2 cup granulated sugar
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1/2 teaspoon peppermint extract
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking powder, and salt.
- In another bowl, mix granulated sugar, brown sugar, vegetable oil, milk, vanilla extract, and peppermint extract until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Chill the dough in the refrigerator for 30 minutes.
- Roll the dough into balls and then roll each ball in powdered sugar.
- Place the cookies on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are set.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
- For a stronger peppermint flavor, increase the peppermint extract to 1 teaspoon.
- Store cookies in an airtight container for up to a week.
- These cookies can be frozen for up to 3 months.
