- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14 oz) diced tomatoes
- 4 cups vegetable broth
- 1 can (15 oz) cannellini beans, drained and rinsed
- 1 cup small pasta (like ditalini)
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, carrots, and celery; sauté until softened.
- Stir in garlic, zucchini, and green beans; cook for another 5 minutes.
- Add diced tomatoes, vegetable broth, cannellini beans, oregano, and basil; bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Add pasta and cook until al dente, about 10 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
