Ingredients

  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • 1 cup small pasta (like ditalini)
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, carrots, and celery; sauté until softened.
  3. Stir in garlic, zucchini, and green beans; cook for another 5 minutes.
  4. Add diced tomatoes, vegetable broth, cannellini beans, oregano, and basil; bring to a boil.
  5. Reduce heat and simmer for 20 minutes.
  6. Add pasta and cook until al dente, about 10 minutes.
  7. Season with salt and pepper to taste.
  8. Serve hot, garnished with fresh parsley.
