Description

Cochinita Pibil Tacos are a traditional Mexican dish featuring slow-cooked, marinated pork wrapped in soft tortillas, bursting with flavor and served with pickled onions.


Ingredients

  • 2 lbs pork shoulder
  • 1/2 cup orange juice
  • 1/4 cup lime juice
  • 3 tablespoons achiote paste
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • Salt to taste
  • 12 small corn tortillas
  • 1 cup pickled red onions

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix orange juice, lime juice, achiote paste, garlic powder, cumin, oregano, and salt.
  3. Rub the marinade all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight.
  4. Place the marinated pork in a baking dish, cover with foil, and bake for 3-4 hours until tender.
  5. Once cooked, shred the pork with two forks.
  6. Warm the corn tortillas on a skillet.
  7. Assemble the tacos by placing shredded pork on the tortillas and topping with pickled red onions.
  8. Serve immediately and enjoy!

Notes

  • For extra flavor, you can add fresh cilantro as a garnish.
  • These tacos can be served with a side of salsa for added spice.
  • Leftover pork can be stored in the refrigerator for up to 3 days.
