Description
Cochinita Pibil Tacos are a traditional Mexican dish featuring slow-cooked, marinated pork wrapped in soft tortillas, bursting with flavor and served with pickled onions.
Ingredients

- 2 lbs pork shoulder
- 1/2 cup orange juice
- 1/4 cup lime juice
- 3 tablespoons achiote paste
- 1 teaspoon garlic powder
- 1 teaspoon cumin
- 1 teaspoon oregano
- Salt to taste
- 12 small corn tortillas
- 1 cup pickled red onions
Instructions
- Preheat the oven to 300°F (150°C).
- In a bowl, mix orange juice, lime juice, achiote paste, garlic powder, cumin, oregano, and salt.
- Rub the marinade all over the pork shoulder and let it marinate for at least 2 hours, preferably overnight.
- Place the marinated pork in a baking dish, cover with foil, and bake for 3-4 hours until tender.
- Once cooked, shred the pork with two forks.
- Warm the corn tortillas on a skillet.
- Assemble the tacos by placing shredded pork on the tortillas and topping with pickled red onions.
- Serve immediately and enjoy!
Notes
- For extra flavor, you can add fresh cilantro as a garnish.
- These tacos can be served with a side of salsa for added spice.
- Leftover pork can be stored in the refrigerator for up to 3 days.
