- 1 can (14 oz) coconut milk
- 4 cups chicken broth
- 1 cup fresh cilantro, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated

- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions
- Heat olive oil in a large pot over medium heat.
- Add diced onion, garlic, and ginger; sauté until fragrant.
- Add the diced chicken and cook until browned.
- Pour in the chicken broth and bring to a boil.
- Reduce heat and stir in coconut milk and lime juice.
- Simmer for 15 minutes, allowing flavors to meld.
