Description

Colcannon is a traditional Irish dish made with mashed potatoes, cabbage, and kale, offering a delicious twist on classic mashed potatoes.


Ingredients

Scale
  • 2 pounds potatoes, peeled and quartered
  • 1 cup chopped cabbage
  • 1 cup chopped kale
  • 1/2 cup milk
  • 4 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender, about 15-20 minutes.
  2. In a separate pot, steam the cabbage and kale until wilted, about 5-7 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter and milk to the potatoes, mashing until smooth.
  5. Fold in the steamed cabbage and kale, mixing well.
  6. Season with salt and pepper to taste.
