- 1 cup unsalted butter
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 2 cups fresh or frozen cranberries
- 1/4 cup granulated sugar (for cranberries)
- 1/2 cup rolled oats
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a saucepan, melt the butter over medium heat until it turns golden brown and has a nutty aroma.
- In a large bowl, combine the browned butter, brown sugar, and granulated sugar, mixing until smooth.
- Add the eggs and vanilla extract, and mix until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Spread half of the batter into the prepared baking pan.
- In a separate bowl, toss the cranberries with 1/4 cup of granulated sugar and spread them over the batter in the pan.
- Drop spoonfuls of the remaining batter over the cranberries.
- Sprinkle rolled oats and chopped nuts on top, if using.
- Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
- Allow to cool before cutting into bars and serving.
Notes
- For a sweeter taste, adjust the sugar in the cranberry filling.
- These bars can be stored in an airtight container for up to a week.
- Serve warm or at room temperature for the best flavor.
