Ingredients

Scale
  • 1 cup unsalted butter
  • 1 cup brown sugar

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 cups fresh or frozen cranberries
  • 1/4 cup granulated sugar (for cranberries)
  • 1/2 cup rolled oats

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking pan.

  4. Add the eggs and vanilla extract, and mix until well combined.
  5. In another bowl, whisk together the flour, baking powder, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Spread half of the batter into the prepared baking pan.
  8. In a separate bowl, toss the cranberries with 1/4 cup of granulated sugar and spread them over the batter in the pan.
  9. Drop spoonfuls of the remaining batter over the cranberries.
  10. Sprinkle rolled oats and chopped nuts on top, if using.
  11. Bake for 30-35 minutes or until the top is golden brown and a toothpick comes out clean.
