- 2 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup rolled oats
- ½ cup brown sugar
- ½ cup unsalted butter, melted
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine cranberries, granulated sugar, lemon juice, and vanilla extract. Cook over medium heat until the cranberries burst and the mixture thickens.
- In a bowl, mix flour, baking powder, salt, oats, and brown sugar.
- Add melted butter to the dry ingredients and mix until crumbly.
- Press half of the crumble mixture into the bottom of a greased baking pan.
- Spread the cranberry mixture over the crust.
- Sprinkle the remaining crumble mixture on top of the cranberries.
- Bake for 30-35 minutes or until golden brown.
- Allow to cool before cutting into bars.
Notes
- For a sweeter filling, adjust the sugar according to taste.
- These bars can be stored in an airtight container for up to a week.
- Serve with whipped cream or ice cream for an extra treat.
