Description

A delicious and creamy dish featuring gnocchi made from butternut squash, paired with savory sausage for a comforting meal.


Ingredients

  • 1 lb butternut squash, peeled and cubed
  • 1 lb gnocchi
  • 1 lb Italian sausage, casings removed
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh sage leaves for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the butternut squash with olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until tender.
  3. In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks.
  4. Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
  5. Stir in the roasted butternut squash and heavy cream, and let it simmer for 5 minutes.
  6. Add the cooked gnocchi to the skillet and mix well.
  7. Stir in the Parmesan cheese until melted and creamy.
  8. Serve hot, garnished with fresh sage leaves.

Notes

  • For a vegetarian option, omit the sausage and add more vegetables.
  • Feel free to adjust the amount of cream for desired creaminess.
