- 1 lb butternut squash, peeled and cubed
- 1 lb gnocchi
- 1 lb Italian sausage, casings removed
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 2 tbsp olive oil
- Salt and pepper to taste
- Fresh sage leaves for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Toss the butternut squash with olive oil, salt, and pepper, and roast in the oven for 25-30 minutes until tender.
- In a large skillet, cook the sausage over medium heat until browned, breaking it apart as it cooks.
- Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.
- Stir in the roasted butternut squash and heavy cream, and let it simmer for 5 minutes.
- Add the cooked gnocchi to the skillet and mix well.
- Stir in the Parmesan cheese until melted and creamy.
- Serve hot, garnished with fresh sage leaves.
Notes
- For a vegetarian option, omit the sausage and add more vegetables.
- Feel free to adjust the amount of cream for desired creaminess.
- This dish can be made ahead and reheated, but the gnocchi may become softer.
