Ingredients

- 1 cup pasta (your choice)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 can diced tomatoes (14.5 oz)
- 4 cups chicken broth
- 1 cup heavy cream
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
- Fresh parsley for garnish
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the diced chicken and cook until browned.
- Stir in the onion, garlic, and bell pepper; sauté until softened.
- Add the diced tomatoes, chicken broth, and Cajun seasoning; bring to a boil.
- Stir in the pasta and cook according to package instructions.
- Reduce heat and stir in the heavy cream; simmer for 5 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.

- For a spicier version, add more Cajun seasoning.
- Can substitute heavy cream with a lighter alternative for a lower calorie option.
