Ingredients

  • 1 cup red lentils
  • 2 cups carrots, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add diced onion and minced garlic, sauté until translucent.
  3. Add chopped carrots and cumin, cook for a few minutes.
  4. Stir in red lentils and vegetable broth, bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes until lentils are tender.
  6. Blend the soup until smooth, then stir in coconut milk.
  7. Season with salt and pepper to taste, and serve warm.
