- 4 cups broccoli florets
- 1 cup chopped onion
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cups shredded sharp cheddar cheese
- 1 cup heavy cream
- 1/4 cup all-purpose flour
- Salt and pepper to taste
Instructions
- In a large pot, sauté the onions and garlic until translucent.
- Add the broccoli florets and vegetable broth, and bring to a boil.
- Reduce heat and simmer until the broccoli is tender.
- In a separate bowl, whisk together the heavy cream and flour until smooth.
- Slowly add the cream mixture to the pot, stirring constantly.
- Add the shredded cheddar cheese and stir until melted and smooth.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
Notes
- For a thicker soup, blend a portion of the soup and return it to the pot.
- Feel free to add more cheese for extra creaminess.
