Description

A delicious and creamy cheddar broccoli soup inspired by Panera Bread, perfect for a comforting meal.


Ingredients

Scale
  • 4 cups broccoli florets
  • 1 cup chopped onion
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cups shredded sharp cheddar cheese
  • 1 cup heavy cream
  • 1/4 cup all-purpose flour
  • Salt and pepper to taste

Instructions

  1. In a large pot, sauté the onions and garlic until translucent.
  2. Add the broccoli florets and vegetable broth, and bring to a boil.
  3. Reduce heat and simmer until the broccoli is tender.
  4. In a separate bowl, whisk together the heavy cream and flour until smooth.
  5. Slowly add the cream mixture to the pot, stirring constantly.
  6. Add the shredded cheddar cheese and stir until melted and smooth.
  7. Season with salt and pepper to taste.
  8. Serve hot and enjoy!

  • For a thicker soup, blend a portion of the soup and return it to the pot.
