Ingredients

  • 4 poblano peppers
  • 1 cup heavy cream
  • 1 tablespoon olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • Salt and pepper to taste

Instructions

  1. Roast the poblano peppers over an open flame until charred, then place them in a plastic bag to steam for 10 minutes.
  2. Peel the skin off the peppers, remove the seeds, and chop them.
  3. In a skillet, heat olive oil over medium heat and sauté the onion until translucent.
  4. Add the minced garlic and cook for another minute.
  5. Stir in the chopped poblano peppers and cumin, cooking for 2-3 minutes.
  6. Pour in the heavy cream and bring to a simmer, cooking until slightly thickened.
  7. Season with salt and pepper to taste, then blend until smooth if desired.
