- 1 cup pumpkin puree
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook the pasta according to package instructions until al dente.
- In a large skillet, sauté the minced garlic in a bit of olive oil until fragrant.
- Add the pumpkin puree and heavy cream to the skillet, stirring to combine.
- Stir in the Parmesan cheese and Italian seasoning, and season with salt and pepper.
- Once the sauce is heated through, add the cooked pasta to the skillet and toss to coat.
- Serve hot, garnished with fresh parsley.

- For a vegan version, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
