- 4 cups water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup heavy cream

- 2 green onions, chopped (for garnish)
Instructions
- Rinse the black-eyed peas and soak them in water overnight.
- Drain the peas and place them in a pot with 4 cups of fresh water.
- Bring to a boil, then reduce heat and simmer for about 30 minutes or until tender.
- In a separate pan, heat olive oil over medium heat and sauté the onion and garlic until translucent.
- Add the cooked black-eyed peas to the onion and garlic mixture.
- Stir in the heavy cream, salt, black pepper, and smoked paprika.
- Cook for an additional 10 minutes, stirring occasionally.
- Serve hot, garnished with chopped green onions.
