Deliciously crispy baked cheesy squash rounds that are easy to make and irresistible.

Ingredients

  • 2 medium yellow squash
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil spray

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the yellow squash into 1/4 inch rounds.
  3. In a bowl, mix together the mozzarella cheese, Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
  4. Dip each squash round into the cheese mixture, coating both sides.
  5. Place the coated squash rounds on a baking sheet lined with parchment paper.
  6. Spray the tops with olive oil spray.
  7. Bake for 20-25 minutes or until golden brown and crispy.
  8. Serve warm and enjoy!

Notes

  • For extra flavor, add some chopped fresh herbs to the cheese mixture.
  • These can be served as a snack or a side dish.
