- 2 medium yellow squash
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1 cup breadcrumbs
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil spray
- Preheat the oven to 400°F (200°C).
- Slice the yellow squash into 1/4 inch rounds.
- In a bowl, mix together the mozzarella cheese, Parmesan cheese, breadcrumbs, garlic powder, Italian seasoning, salt, and pepper.
- Dip each squash round into the cheese mixture, coating both sides.
- Place the coated squash rounds on a baking sheet lined with parchment paper.
- Spray the tops with olive oil spray.
- Bake for 20-25 minutes or until golden brown and crispy.
