1 lb salmon fillet, cut into bite-sized pieces
1 cup panko breadcrumbs
1/2 cup all-purpose flour
2 large eggs
1/2 cup mayonnaise
2 tablespoons sweet chili sauce
1 tablespoon sriracha sauce
1 teaspoon garlic powder
1 teaspoon salt
1/2 teaspoon black pepper
Oil for frying
Instructions
In a bowl, mix the flour, garlic powder, salt, and pepper.
In another bowl, beat the eggs.
In a third bowl, place the panko breadcrumbs.
Dip each salmon piece first in the flour mixture, then in the egg, and finally coat with panko breadcrumbs.
Heat oil in a frying pan over medium heat.
Fry the salmon bites until golden brown and crispy, about 3-4 minutes per side.
In a separate bowl, mix mayonnaise, sweet chili sauce, and sriracha to create the Bang Bang sauce.
Once the salmon bites are cooked, toss them in the Bang Bang sauce.
Serve immediately and enjoy!
Notes
For extra crunch, double coat the salmon bites in panko.
Adjust the spiciness of the sauce by adding more or less sriracha.
These bites can be served with a side of fresh vegetables or over a bed of rice.
