Ingredients

  • 2 pounds beef chuck, cut into 1-inch cubes
  • 4 cups beef broth
  • 4 medium carrots, sliced
  • 3 medium potatoes, diced
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Brown the beef cubes on all sides.
  2. Transfer the browned beef to the crock pot.
  3. Add the carrots, potatoes, onion, and garlic to the crock pot.
  4. In a separate bowl, mix the beef broth, tomato paste, thyme, rosemary, salt, and pepper.
  5. Pour the broth mixture over the beef and vegetables in the crock pot.
  6. Cover and cook on low for 8 hours or high for 4 hours, until the beef is tender.
  7. Adjust seasoning if necessary before serving.

Notes

  • For a thicker stew, mix 2 tablespoons of cornstarch with cold water and stir into the stew during the last 30 minutes of cooking.
