- 1 lb boneless, skinless chicken breasts
- 1 cup diced bell peppers
- 1 cup diced onions

- 1 can (14.5 oz) diced tomatoes
- 1 cup chicken broth
- 1 cup heavy cream
- 2 cups penne pasta
- 2 tablespoons Cajun seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the bottom of the crock pot.
- Add the diced bell peppers, onions, and minced garlic on top of the chicken.
- Pour in the diced tomatoes and chicken broth.
- Sprinkle the Cajun seasoning over the mixture and season with salt and pepper.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream and penne pasta.
- Cover and continue to cook until the pasta is tender.
- Serve hot and enjoy your flavorful dish!
