Description

Crock Pot Cajun Chicken Pasta is a delicious and easy-to-make dish that combines tender chicken, creamy sauce, and flavorful Cajun spices, all cooked in a slow cooker for a perfect weeknight meal.


Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 1 cup diced bell peppers
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 cups penne pasta
  • 2 tablespoons Cajun seasoning
  • Salt and pepper to taste

Instructions

  1. Place the chicken breasts in the bottom of the crock pot.
  2. Add the diced bell peppers, onions, and minced garlic on top of the chicken.
  3. Pour in the diced tomatoes and chicken broth.
  4. Sprinkle the Cajun seasoning over the mixture and season with salt and pepper.
  5. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  6. About 30 minutes before serving, stir in the heavy cream and penne pasta.
  7. Cover and continue to cook until the pasta is tender.
  8. Serve hot and enjoy your flavorful dish!
