- 4 cups chicken broth
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 cup diced tomatoes
- 1 cup chopped spinach
- 1 onion, diced
- 3 cloves garlic, minced
- 1 tsp Italian seasoning
- Salt and pepper to taste
Instructions
- Place the chicken breasts in the crock pot.
- Add the chicken broth, diced tomatoes, onion, garlic, and Italian seasoning.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- Once the chicken is cooked, shred it with two forks.
- Stir in the heavy cream, Parmesan cheese, and chopped spinach.
- Cook for an additional 30 minutes on low until heated through.
- Season with salt and pepper to taste before serving.
