Description

Ingredients

  • 2 cups cooked chicken, shredded
  • 3 cups corn (fresh or frozen)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 medium potatoes, diced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a crockpot, combine the shredded chicken, corn, diced onion, minced garlic, chicken broth, diced potatoes, salt, pepper, and paprika.
  2. Stir the ingredients together until well mixed.
  3. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  4. About 30 minutes before serving, stir in the heavy cream.
  5. Once cooked, garnish with fresh parsley before serving.
