Description

A delicious and easy-to-make sweet potato casserole prepared in a crockpot, perfect for Thanksgiving.


Ingredients

  • 4 cups sweet potatoes, peeled and cubed
  • 1/2 cup brown sugar
  • 1/4 cup butter, melted
  • 1/2 cup milk
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1 cup mini marshmallows

Instructions

  1. In a large bowl, combine sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg.
  2. Mix until well combined and smooth.
  3. Transfer the mixture to a greased crockpot.
  4. Cover and cook on low for 6-8 hours or until sweet potatoes are tender.
  5. In the last 30 minutes of cooking, sprinkle mini marshmallows on top and cover until melted.

Notes

  • For a healthier option, reduce the amount of brown sugar.
  • Can be made a day in advance and reheated before serving.
