A delicious and easy-to-make sweet potato casserole prepared in a crockpot, perfect for Thanksgiving.
Ingredients

- 4 cups sweet potatoes, peeled and cubed
- 1/2 cup brown sugar
- 1/4 cup butter, melted
- 1/2 cup milk
- 2 eggs
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1 cup mini marshmallows
Instructions
- In a large bowl, combine sweet potatoes, brown sugar, melted butter, milk, eggs, vanilla extract, cinnamon, and nutmeg.
- Mix until well combined and smooth.
- Transfer the mixture to a greased crockpot.
- Cover and cook on low for 6-8 hours or until sweet potatoes are tender.
- In the last 30 minutes of cooking, sprinkle mini marshmallows on top and cover until melted.
Notes
- For a healthier option, reduce the amount of brown sugar.
- Can be made a day in advance and reheated before serving.
- Feel free to add chopped pecans or walnuts for extra crunch.
